The Do’s:
- Smile at the guest, it makes a lasting impression.
- Serve from the right and clear from the right.
- Use the guest’s name, they like it!
- Assist guest with seating and leaving.
- Give special attention to single diners.
- Offer children amenities and a snack food as soon as they sit down.
- Always work clockwise around the table.
- Mark the table to work efficiently.
- Use a tray! It is your best friend in times of need.
- Use proper verbiage and descriptive words.
- Offer the guest at least 2 alternatives when solving a problem / question.
- Have a positive attitude even during tough times.
- Communicate with team members to provide excellent service.
- Service continues until the guests leave not when you drop the check.
- Take ownership of all guests’ opportunities.
- Communicate with management and staff when you need assistance.
The Don’ts:
- Say No
- Give the guest an excuse.
- Carry glassware without a tray.
- A guest should never have to ask for more coffee or tea.
- Take a partial order to the table.
- Unbalanced serving or clearing.
- Building or un-building at the table.
- Scraping of food in the restaurants.
- Crossing the guest’s middle lines.
- Ask a guest, A who gets what ?
- Lean on furniture or walls.
- Break the Standards!
- Let the guest leave unhappy (get your manager involved).
- Come to work in a bad attitude……. the guest can see it and your co-workers hate it!
