Tea is also made in a different way i.e. infused tea. This process is different from the traditional way a extractions or flavours from herbs and fruits are infused in the tea to give it a different taste and flavour. From a point of view of food legislation, fruit and herbal infusions are products that are only similar to tea. The starting products are dried plants or parts of plants such as blossoms, leaves, peel, roots, stems, fruits and sometimes aroma.
- FRUIT INFUSIONS
Fruit infusions are always mad of more than one fruit. They are blends of different parts of the fruit, which complement each other to form special flavours. Very often the brilliant Hibiscus, also known as mallow, forms the basis for these teas.
The plants are organically grown and as often as possible the fruits of wild plants are used for their original aroma.
- HERBAL INFUSIONS
The most popular herbal infusions are mono-teas, i.e. teas that are made of only one plant variety such as peppermint rose, hip or Chamomile.
One unique herbal infused tea is MATE. It is a native Argentinean infusion and its name comes from the Quichua Indian tradition. First the green leaf herb is put into the Mate, then the Bombilla (a kind of metal straw) is introduced into the green herb and hot water is poured on top. It can be served with or without sugar and it is usually shared by a group of friends, passing it around. Even nowadays, preparing the mate is considered an art in itself.
- ICED TEAS
Nowadays, because of the fast developing tea industry and the high demand for new kinds of tea products some leading tea producing companies have brought up new kinds of tea popularly known as iced tea. The method of this tea is different from others.
First the tea is prepared, cooled in cans and the flavour is infused in the tea. This mixture is then preserved in airtight containers with preservatives and other additives and sealed for use. It is usually served chilled and can be drunk as a refresher.
