Sequence of Service
- To communicate professionally and courteously with the guest. How would you feel if you return to the restaurant and the procedures were different each time?
- Having command of the SOS will free your mind to pleasantly interact with your guests and save your time.
- Greeter, standing on the greeter station on two sides of the restaurant entrances, with standard sentence and smile, eye contact. Greet the guest….
- Seat the guest and introduce the guest to the waiter/waitress/captain.
- Waiter/ Waitress greet the guest at the table, approach the table within 30 seconds.
- Service start clockwise and ladies always first, offer the menu according to standard (see SOP) and suggest specials and inform the guest of variations of the menu items accordingly to the guest preference.
- Offer & suggest according to standard the guest beverages/ aperitif and take the order. (see SOP)
- Pick up the beverage on the counter and serve the beverage. Observe the guest and allow the guest time to make their choices.
- Take the food order, including the main courses and additional beverages.
- Take order from the right hand side and ladies first and clockwise.
- Take food order guest is ready, within 3 minutes if possible.
- Repeat the order to ensure that it is correct understood by using the seat number system.
- Set up the table according to the dishes ordered. According to standards. (see SOP)
- Waiter/ Waitress/Captain after serving the bread & spreads, serve additional beverages and serve the wine.
