IMPORTANCE/INTEREST
- It is important to know what drinks are ordered and if there are any special requirements. How would you feel if you order a beverage without ice and after re-page minding the waiter twice you still would get your drink with ice?
NEED
- It is important how to process a beverage order in order that the guest would receive the correct order from the bar and this would impact the dining experience.
STANDARD
- Check before operating hour’s availability of items.
- Ensure to be aware of all items which are not available.
- Do not take order for items missing. Inform the guest before he made his/ her choice that the item is not available and suggest alternative.
- Write clear and understandable.
- Before the orders are passed to the Bar and cashier.
- Ensure that the order is clearly written and understood.
- Punch item into micros.
- Punch all relevant information’s as well into micros.
- Ensure detailed information’s.
- Up-sell!!! Recommend premium brands.
- Up sell the beverages by recommending highest profitable beverages.
- Use knowledge to up sell more profitable beverages to the guest.
- Recommend premium brands instead of market brand beverages. E.g. suggest Black Label Johnny Walker instead of Red Label Johnny Walker.
- Ask all relevant questions when you take the order. Ensure you are not walking twice to the table.
- Ensure to ask all relevant questions for the drink order.
- E.g. „Would you prefer your coke with ice and lemon? “
